Its always been that the spotting estimate is the more accurate but anomalies might occur when your tracking skill is higher than your spotting skill
Not that it makes much difference. neither spotting or tracking skills are very accurate anyway. Most times the lowest number is closest to the truth.
As a real life hunter I can say without question, the only way to guess the weight of an animal is when you hoist it on your back. That way I could usually get to within 10 t0 20 ponds, depending on how much my legs bowed.
