The animation of the bears is bugged. It is very mechanical and thready when the bear sits up, or when he turns, or runs.

A simple wound in the ear, or other not vital zone very fast makes the animal die.

Yes but nothing and the patch 1.7 is out. I know that Expansive Worlds (Stefan etc.) also consults this site. It is more clear here to have returns...

When you harvest the 2 bisons in Ernsdorf for this mission they do not count as a harvest on your hunting profile, is it an error?

I often have my rifle shots registered as shotgun hits. The xps is for rifle though. Pump shotgun is registered as rifle not shotgun.
